1.

Ikan dibuang sisik, dibersih dan dipotong 5 bahagian, lumur dengan garam.
Clean the fish, cut into 5 pieces and season with salt and tamarind.

2. Tunis bawang merah, masukkan serai dan pes bumbu masak sehingga empuk.
Heat the cooking oil and saute the shallots and lemon grass. Add the paste and simmer until cooked and tender. Leave aside.
 
3. Letakkan ikan di atas duan pisang, salutkan dengan bahan yang ditumis, taburkan hirisan daun dan asam kendung. Bungkus ikan dengan daun pisang dan dibalutkan sekali lagi dengan aluminium foil. Gril hingga masak.
Place the fish on the banana leave and marinate with (2), sprinkle tumeric/noni leaves. Wrap with banana leaves and aluminium foil. Gril until cooked.
